Unstuffed Zucchini Casserole makes an easy and quick meal. If you like stuffed zuchhini but don’t want to waste time scooping out the pulp, this recipe is what you need. You can definitely feel the same taste with the same ingredients yet with less work. And you can easily turn it into a crowd pleaser by doubling the ingredients.
To be honest, this recipe is something I made up just to shorten the time to make a regular stuffed zucchini. I love all stuffed vegetables in our cuisine, but don’t always have time to make them in the regular way. So I decided to find the shortcuts to have the same taste. Have you seen my Unstuffed Cabbage Casserole Recipe? It is always a hit and whoever eats it says that they will probably quit stuffing cabbage and make it with this much easier method. So this unstuffed zucchini casserole is another shortcut. I must admit that I’ve almost never stuffed zucchini again since I developed this recipe.
What I love about this recipe is I throw everything into the pot at the same time.No need for sauting or stirring occasionally. You need to check it just one or two times to see if it needs a little more water. Other than that, just cover the pot and wait until it’s done, after about 30 minutes. I’m sharing the vegetarian version in the recipe below, but you can add ½ cup ground beef if you like.
Our 2-year-old gourmet’s number one favorite meal is this Unstuffed Zucchini Casserole; either with ground lamb (as he can’t eat beef) or vegetarian version. I’ve made Turkish- Greek style Stuffed Zucchini for him once, but he tended to eat the inside and not the zucchini itself. On the other hand, he eats everything in this meal, he even picks the zucchini chunks and says they are yummy. You can imagine the happiness of a mom when his son describes zucchini as yummy. Now I make it for him once a week and he gobbles up everything in his bowl, sometimes asking for extra lemon juice.
I know stuffed zucchinis or zucchini boats look much more elegant when serving, but you need to be quicker especially if you are a working mom or dad. How a meal looks is not your concern then. So here is the quickest way of pleasing your family with some healthy ingredients.

Unstuffed Zucchini Casserole
Stuffed zucchini disguised in casserole.
- Prep Time: 10 minutes
- Cook Time: 30 minutes
- Total Time: 40 minutes
- Yield: 40 1x
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cups diced zucchini
- 1/2 cup rice
- 2 tomatoes, chopped
- 1 red bell pepper, diced
- 4 cloves garlic, chopped
- 2 tablespoons chopped parsley
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon dried mint
- 1/2 teaspoon chili
- 1 and 1/2 tablespoons lemon juice
- 3/4 cup hot water
- Put everything in a pot in the order given above. Cover the pot and cook over low heat until everything is tender, for about 30 minutes.
- Check it one or two times to see if it needs extra water. Add 1/4 cup extra water if needed and cook until it is absorbed.
- Serve warm.
Add 1/2 cup ground beef to the pot at the same time with everything if you like or just saute it in the pot beforehand and then add in the other ingredients.
