Whenever I need a light, quick and tasty lunch, I can’t think of a better option than an easy sandwich. We make Avocado Tuna Sandwich (for Yusuf) and Feta Cheese Sandwich (for me) on our shooting days. Both are easy to make, tasty and satisfying.
Feta is mostly a staple in a sandwich for me. The other ingredients depend on whatever we have on hand. I sometimes go simple and just add avocado as the second ingredient in my cheese sandwich or sometimes make it in the Mediterranean way and use tomatoes and cucumbers.
We love making sandwiches both for breakfast and lunch because you can combine any food between two slices of bread and create the tastiest thing ever. Plus, it’s easy to make sandwiches.
What Goes In Cheese And Pickle Sandwich?
My feta cheese sandwich recipe is much richer this time. I prepare a quick avocado spread that is very similar to our Healthy Avocado Dressing, but thicker than it. Spread a generous amount of it on bread and load it with cucumbers, thick feta cheese slices, lots of herbs and finally pickled red onions, my favourite ingredient in this sandwich. With their amazing tangy flavour and crunchy texture, pickled red onions make a wonderful twist. This sandwich would be just one of those classic cheese sandwich recipes without these pink beauties. It makes a great breakfast too if you don’t mind eating pickles in the morning. Well, I don’t.
This cold cheese sandwich is the best vegetarian sandwich I’ve made so far. Thanks to pickled onions, you feel like you’re eating it at your favourite fast food restaurant. No worries, I’m sharing the recipe for pickled onions below as a bonus.
If you don’t want another step when making your sandwich, you can use the onions as they are, but I promise it is worth waiting for a few extra minutes to have that addictive taste.
Best Cheese For Sandwich Making
As this one is a cold sandwich, feta is my number one option. Its tangy flavor wonderfully matches with the ingredients in this sandwich. Have you ever tried feta on your salad? It makes a fantastic touch. As this sandwich is almost like a salad between two bread slices, use feta in this recipe.
Also, feta can be considered as a healthy cheese for making sandwiches because it contains lower fat. However, it is a salty cheese, so be careful about the amount of the salt you use in your sandwich.
If you don’t like feta and are looking for a milder cheese, use ricotta instead. It makes a perfect pair with cucumbers and herbs. Ricotta is healthy too since it is low in calories too. Thanks to its creamy texture, you can just combine it with the avocado spread and use it in your sandwich.
What Herbs To Use In This Cold Cheese Sandwich
This is a cold sandwich. Unlike french toast breakfast sandwich, you can use as many fresh herbs as you like in this recipe.
I used four types of fresh herbs in this sandwich: Arugula, mint, green onions and purslane leaves. Fresh basil, dill or parsley would work fine too. Use any type of herbs you have on hand. You can never go wrong with fresh herbs.
How To Make Cheese Sandwich With Herbs
This healthy breakfast sandwich has three easy parts.
First, make pickled onions. In a medium bowl, soak onion slices in boiling water and wait for 5 minutes. Transfer them into another bowl with very cold water and drain after a minute. Then, in a medium-sized jar, combine vinegar, sugar and salt. Mix well. Add in onion slices and let sit for 5-10 minutes. Your pickled onions are ready. You can make this ahead of time and store it in the refrigerator for up to a week.
Second, make avocado spread. Use a very ripe avocado for this. Mash it well using a fork and combine with lemon juice, salt and green onions. You don’t need to add green onions is this spread as we already use pickled onions.
Third, assemble the sandwich. Spread a slice of bread with a thick layer of avocado spread. Top with pickled red onions, 2 thick slices of feta cheese, a few slices of cucumber and a handful of herbs. Put the other slice of bread and press down gently.

Pickled Red Onions:
- 2 red onions, sliced
- 1 cup boiling water
- ¾ cup white vinegar
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 ripe avocado
- 1 teaspoon lemon juice
- 1 tablespoon chopped green onions
- A pinch of salt
- 2 slices bread
- 2 tablespoons avocado spread
- 2 thick slices of feta cheese
- A few thin slices of cucumber
- Several slices of pickled red onions
- A handful of herbs (arugula, mint and purslane), rinsed and dried well
Pickled red onions:
- In a medium-sized bowl, pour boiling water over onion slices and let them sit for about 5 minutes. Transfer them into very cold water and drain.
- In a medium-sized jar, combine vinegar, sugar and salt. Mix well. Add in onion slices and let sit for 5-10 minutes.
- You can refrigerate it up to 1 week.
- Mash the avocado using a fork. Add in lemon juice, salt and chopped green onions, stir well.
Assemble the sandwiches:
- Spread a slice of bread with a thick layer of avocado spread. Top with pickled red onions, 2 thick slices of feta cheese, a few slices of cucumber and a handful of herbs. Put the other slice of bread and press down gently. Repeat for other bread slices.
- Serve it with extra pickled red onions.
