Buttered corn is an easy side dish that everyone loves. It is so tasty and can be paired with almost any dish. It is a great snack on its own too. You can use fresh corn on the cob, canned corn, frozen corn or raw corn kernels.
You might say we are not in corn season yet and it’s too early to share a recipe for Buttered Corn with Chili. These corns are definitely not fresh, but not frozen either. I used raw corn kernels for this irresistibly tasty snack. Raw corn is not only used to make popcorn, it can also be boiled just like dried beans or any other legumes. You can make whatever you want with these boiled corns then.
You can definitely use frozen or canned corns to make buttered corn, it’s a matter of choice. I mostly freeze corns in small bags at the end of summer, but when we run out of these, I buy dried corns and boil it myself. I know it’s not the easiest ot quickest way, but hey I’m the woman of difficult things! I do love making things myself at home!
If you have excessive amount of corn in your pantry, you can boil them and store them in small bags in the freezer for later use in a casserole, in salads, in soups or in this corn fritters. If you need a quick snack or side dish, then you can just heat these in hot water and make this yummy buttered corn. You don’t need store bought versions any more!
It might sound difficult, but believe me it’s not. You just need to soak dried corns overnight and then cook them in a pressure cooker next day for 30 minutes. They are ready to use! So easy, isn’t it?
I use just salt and a little chili on this butter corn, but you can add any other spices you like. You can even drizzle hot chili sauce on it. Buttered corn doesn’t have to be savory, it can turn into a sweet snack if you add a little sugar or honey and ginger or cinnamon. You see options are endless, you can create a completely different version. Just make sure that you put enough butter!

Buttered Corn with Chili
Dried corns are boiled, buttered and topped with chili powder.

Ingredients
- 1 cup dried corn
- 2 cups water
- 4 tbsp butter
- 2 tsp salt
- 1 tsp chili powder
Instructions
- Soak dried corn overnight.
- Boil it with 2 cups water in a pressure cooker for 30 minutes and drain.
- Share it in cups when corns are still warm and add enough butter on each.
- Sprinkle salt and chili powder over them.
- Serve warm.
