We had some leftover roasted corn when we made Mexican Corn on the Cob and I used their kernels for this out-of-this-world Hot Cheesy Corn Dip recipe, but you can use canned or frozen corn too.
I can honestly say that this is the BEST corn dip I’ve ever had. It’s perfectly cheesy, which is great for a cheese fan like me and wonderfully creamy. Tortilla chips are perfect to serve along with this goodness, but well, you don’t even need them. Just grab a spoon and eat it! Don’t forget to stop and breath when doing this though.
I’m not a fan of cream cheese or mayonnaise and they are never staple in my cooking, not only because of their high calories, but I don’t like their taste much, either. However, there are a few exceptions like this Hot Cheesy Corn Dip. I need to confess that whenever I make this divine corn dip, I find it really hard to stop myself after eating more than half of it.
The hotness coming from green chilies balances all the flavors and it is the thing that makes you want to eat more and more. You can turn this dip into a kid friendly one by leaving the chilies out, but I can’t think of it without it. You can double the recipe so that you can make it in both versions.
This Hot Cheesy Corn Dip should be served right after it is removed from oven, so don’t bake it in advance. However, you can prepare it ahead of time and place it into the oven half an hour before serving.

Ingredients
- 3 cups of corn, roasted, frozen or canned
- 2 tablespoons minced green chilies
- 8 oz cream cheese at room temperature
- ⅓ cup mayonnaise
- 1 cup shredded mozzarella
- 1 tablespoon chopped cilantro for garnish, optional
Instructions
- Preheat oven to 350F.
- In a medium sized bowl combine mayonnaise and cream cheese until combined well.
- Add in corn, chilies and mozzarella.
- Pour it in a medium baking dish and bake for 30 minutes or until its top gets golden.
- Remove from oven and garnish with cilantro. Serve hot with tortilla chips.
