    Turkish Egg Dishes for Breakfast

Eggs are a big part of breakfast in Turkey, and there are so many Turkish egg dishes to choose from. All of them are easy to make with simple ingredients and full of flavor. We love them all and make them quite often. If you enjoy eggs for breakfast, we think you’ll love these too.

The Turkish Egg Dishes Everyone Knows

These are the egg dishes everyone in Turkey knows. They’re simple, familiar, and often the first ones that come to mind when you think of a Turkish breakfast.

    Menemen

Scrambled eggs with tomatoes and peppers aka menemen in a pan accompanied by a glass of Turkish tea and bread slices.

When it comes to Turkish egg dishes, menemen is by far the most popular one in the country. It’s a simple dish made with tomatoes, peppers (sometimes onions) and eggs.

When making menemen, the eggs are either left whole, as you see in the first picture of this page, or mixed into the cooked tomatoes and peppers in the pan.

In Turkey, menemen is one of those dishes people always argue about. Some say it has to have onions, while others say it should never include them.

It’s something people make for weekend breakfast, but also for a quick lunch or even dinner. It’s also the egg dish we make most often, and no matter how many times we cook it, it still feels just as exciting every time. It’s usually served hot and eaten with bread. Super satisfying!

    Sucuklu yumurta

Turkish breakfast with sucuklu yumurta (eggs with sausage), olives, cheese, jam, fresh herbs, and tea on a table.

Sucuklu yumurta is a very popular egg dish in Turkey, made with eggs and Turkish sausage called sucuk.

It’s a rich and flavorful dish, but since sucuk is an expensive ingredient in Turkey, it’s not as budget-friendly as the other egg dishes.

    Çılbır

Turkish eggs (çılbır) with poached eggs over garlicky yogurt and chili butter, served in a bowl.

Çılbır, often known as Turkish eggs, is made with poached eggs served over garlicky yogurt and topped with a warm spicy butter sauce.

Çılbır is not as famous as menemen in Turkey, but it’s still quite popular. Interestingly, it has become even more popular outside of Turkey in recent years.

The flavor combination might sound a bit unusual at first, but you’ll love it once you try it.

    Hearty Turkish Egg Dishes

These egg dishes are a bit more filling and can easily work as a full meal. While they are often enjoyed for breakfast, they’re just as common for lunch or even dinner.

    Ground Beef and Eggs

Hands holding a skillet filled with ground beef and eggs topped with parsley, surrounded by bread, olives, sliced tomatoes, and Turkish tea.

Ground beef and eggs, known as kıymalı yumurta in Turkish, is a simple but very satisfying dish made with sautéed ground beef and eggs cooked together.

It’s rich, filling, and packed with flavor, making it a great option when you want something more than a light breakfast.

It’s one of those dishes that can be served at any time of the day, especially when you need something quick but still hearty.

    Spinach and Eggs

Spinach and 4 whole eggs cooked in a pan.

Spinach and eggs, or ıspanaklı yumurta in Turkish, is another comforting dish that’s both simple and nourishing. Made with sautéed spinach and eggs, it’s lighter than ground beef and eggs but still filling enough to stand on its own.

It’s a great option if you want something hearty but not too heavy, and it works perfectly for breakfast, lunch, or dinner.

    A quick note:
For both of these dishes, you can whisk the eggs in a bowl first and then pour them into the pan. But we prefer leaving the eggs whole, as it makes them easier to portion when serving.

Boiled Eggs Are Never Boring in Turkey

Boiled eggs don’t have to be plain or boring. In Turkey, we turn them into simple but really flavorful dishes with just a few ingredients. If you’re tired of eating boiled eggs the same way, these are definitely worth trying.

    Turkish Egg Salad

Turkish egg salad with boiled eggs, fresh herbs, and spices in a white bowl with a spoon.

Turkish egg salad, or yumurta salatası, is one of the best ways to enjoy boiled eggs. It’s made with fresh herbs, spices, olive oil, and a little lemon juice, which gives it a bright and refreshing flavor.

It’s light but still satisfying, and a great option for breakfast. If you’ve been bored of plain boiled eggs, this is a very easy way to change things up.

    Yumurta Kapama

Close-up of hard-boiled eggs in spiced butter with dried mint and Turkish red pepper flakes.

Yumurta kapama is a simple dish made with boiled eggs cooked in a buttery sauce flavored with dried mint and pul biber (Turkish red pepper flakes or Aleppo pepper).

The eggs soak up all that buttery, spiced sauce, and the flavor is so good it’s hard to put into words until you try it.

It’s not exactly a light dish, but it’s so good that it’s perfect for those moments when you want to treat yourself, especially on a relaxed weekend morning.

A Simple Way to Make Eggs More Fun

If you’re trying to get kids to eat eggs, this is one of the easiest ways to do it.

    Turkish Eggy Bread

Two slices of eggy bread served with tomatoes and fried egg garnished with mint leaves on a dark colored plate.

Turkish eggy bread, known as yumurtalı ekmek, is similar to French toast, but it’s made as a savory dish.

Bread slices are dipped into a simple egg mixture and pan-fried until golden. It’s soft on the inside, slightly crispy on the outside, and very easy to make.

It’s one of those recipes that feels a bit nostalgic for many people, and it’s perfect for a quick breakfast.

Kids especially love it, and it’s a great way to make eggs a bit more fun and easier to enjoy. Our son used to love this when he was in preschool in Turkey. It was one of his favorite breakfasts there.

What to Serve with Turkish Egg Dishes

Turkish egg dishes are usually served as part of a bigger Turkish breakfast spread rather than on their own. Even something simple feels more complete when you add a few small sides to the table.

Hands dipping bread into egg yolk from ground beef and eggs while another person holds Turkish tea at a Turkish-style breakfast table with tomatoes and olives.

Fresh bread is a must. Whether it’s something like simit, bazlama, or just a loaf of crusty bread, it’s perfect for dipping into dishes like menemen or çılbır.

Cheese is another essential. A few slices of white cheese (similar to feta) go really well with eggs and help balance the flavors.

You’ll almost always find olives on the table too, along with fresh vegetables like tomatoes and cucumbers.

And of course, a glass of Turkish tea on the side brings everything together.
