These Cheese Stuffed Tomatoes are great when you need simple yet fancy looking appetizers. They are very easy to make as well. You don't need a lot of time to make these. No ingredients that you are not even familiar with. Who doesn't like this type of recipes more? These are the perfect example of raw recipes. Do you have tomatoes in your kitchen right now? Cheese and herbs? You are ready to go if you have these.

How to make

These are ready in 5 minutes because they are not cooked or baked. Just discard the seeds of tomatoes and stuff them with a cheese mixture you prepare. I used a mixture of feta cheese and ricotta in the mixture and then add in chopped parsley or whatever herb you have on hand. Make sure you store the remaining feta cheese in the right way.

Drizzle olive oil over them and mix until combined. You can adjust the mixture to your taste. Use more feta cheese crumbles if you want or use your favorite cheeses. Stuffing tomatoes with mozzarella and fresh basil would make a very nice twist on regular caprese salad. No?

You can serve these cheese stuffed tomatoes at breakfast too. No need for heating, so you can make them ahead of time. Cheese stuffed tomatoes can even be put in lunch box. Just make sure they are chilled enough and aren’t exposed to sunlight for a long time; otherwise cheese starts to smell bad. So you can wrap them with aluminium foil if you are planning to take them away with you.

Ingredients

Scale
  • 4 tomatoes
  • ½ cup feta, crumbled
  • ½ cup ricotta
  • ¼ cup chopped parsley
  • 1 tablespoon olive oil
  • ½ teaspoon chili powder

Instructions

  1. Remove the seeds and pulp of tomatoes using a teaspoon. Put aside.
  2. Mix all the other ingredients except chili and stuff tomatoes with this mixture.
  3. Sprinkle chili powder on the top and serve.
