How to make cheese stuffed tomatoes
These are ready in 5 minutes because unlike Egg Stuffed Tomato Recipe, they are not cooked or baked. Just discard the seeds of tomatoes and stuff them with a cheese mixture you prepare. I used a mixture of feta and ricotta in the mixture and then add in chopped parsley or whatever herb you have on hand. Drizzle olive oil over them and mix until combined. You can adjust the mixture to your taste. Use your favorite cheeses. Stuffing tomatoes with mozzarella and fresh basil would make a very nice twist on regular caprese salad. No?
You can serve these cheese stuffed tomatoes at breakfast too. No need for heating, so you can make them ahead of time. Cheese stuffed tomatoes can even be put in lunch box. Just make sure they are chilled enough and aren’t exposed to sunlight for a long time; otherwise cheese starts to smell bad. So you can wrap them with aluminium foil if you are planning to take them away with you.
