    If you are following our Instagram stories, you already know that I have been obsessed with this super tasty avocado green goddess dressing. I can pour it over any salad from Keto Chicken Salad to Lentil Salad . It’s no secret that I can’t help eating half of it with a spoon when preparing the other recipe to drizzle it over. This dressing is a combination of a few simple ingredients, yet the result is exceptionally luscious.

    How to make

    This is like an avocado ranch dressing without a dairy product like Greek yogurt. If you are a fan of avocado like me, you will find it way better than usual ranch dressing.

    As I love it chunky, I didn’t use a blender to make this dressing. To make it my way, mash the ripe avocado well, chop a small onion super finely and put them in a small jar. Squeeze a lemon or lime into the jar, add in onion and salt. Place the lid and shake well. If it’s too thick and if you want to thin it, add in a tablespoon water and shake it again until combined well. Taste and adjust the salt to your taste.

    If you want a creamier dressing, use your food processor. Put all ingredients in it and blend until smooth. Personally I find the jar shaking method easier because it is easier to wash. Use these simple ingredients, combine them using either a jar or a food processor and the yummiest dressing ever is ready in 5 minutes!

    How to keep

    You can keep it in an airtight container like a jar in the fridge up to a week, it won’t go bad. On the other hand, I suggest making it in small amounts and finishing it within 2 days because it tastes way better when everything in it is still fresh.

    How to use

    There are zillions of options to use this healthy vegan avocado dressing. My favorite is to enjoy it as a dip, so I don’t add any water when I use it as a dip to pair with an appetizer like cauliflower wings or oyster mushroom fried chicken, which are also vegan recipes.

    Avocado Green Goddess Dressing

    INGREDIENTS
      

    • 2 tablespoons onion finely chopped
    • ¼ cup herbs parsley and dill
    • 1 lemon squeezed
    • 2 tablespoons olive oil
    • ¼ teaspoon salt
    • 1 whole ripe avocado
    • 1 tablespoon water optional

    INSTRUCTIONS
     

    • Put chopped onion, herbs, lemon juice, olive oil and salt in a jar.
    • Mash the avocado well and add it into the jar.
    • Place the lid and shake well until combined.
    • Add a tablespoon water if it is too thick and shake again.
    • Keep it in an airtight container in the fridge up to a week, but finishing it within 2 days is the best because it tastes better.

    NOTES

    If you prefer your dressing creamier, use your food processor. Put everything in it and blend until smooth.
