Salad might be a lunch on its own in summer, but in fall it has to be a side. That’s the only difference. We should always have this kind of salad no matter what the season is.

It is possible to adjust this green lentil salad recipe according to season. It could absolutely be made of avocado and lentils only, but I love to add some other seasonal ingredients in it. If we were in summer, I would combine avocado and lentils with tomatoes and cucumber, maybe even with watermelon slices. As we are in fall, I made it with spinach, pomegranate and mandarin. Just imagine the combination of these with nutty flavors of avocado and lentils. Super refreshing and warming at the same time! You will feel so energized after having this immune system booster salad!
Oh and if you want to add more nutrients to your salad, use Sprouted Lentils in it; either raw or cooked.
This green lentil salad is tangy as I think spinach leaves go perfect with lemon. I love the crispiness of spinach leaves and they are one of my favorite snacks. Just squeeze lemon on spinach leaves and gobble down! They add a lovely crunchiness to this salad too.

- 1 cup cooked green lentils
- 1 ripe avocado, chopped
- 1 cup spinach leaves, chopped roughly
- 1 lemon
- 1 teaspoon salt
- 1 tablespoon olive oil, optional
- 4 tablespoons pomegranate seeds
- 2 mandarins, sliced
Instructions
- Combine all ingredients in a large bowl in no particular order. Leave a little pomegranate seeds and mandarins out for garnish.
- Garnish with pomegranate seeds and mandarine.

Hi Kate! Yes, I boil it myself. It depends on the lentils I use. Not all green lentils cook with the same duration. Mostly they cook within 30-40 minutes. You need to check if they are tender enough.
