Baby potatoes always make the best side dish for any meat or chicken dish. I love to add these cute babies into several dishes, my favorite is to have them as a side or snack. Potato is such a great vegetabe that you can use it in many dishes from stews to breads and soups. Have you ever tried Potato Soup? It is one of our favorites in Winter and you might wnt to check it out before freezing months come! Potatoes could be the favorite vegetable for most people in the form of french fries, but I guarantee you will love these roasted baby potatoes as much! You know what? We didn’t use oven or grill to roast them, we used a shallow clay pot and it was amazingly tasty!

Baby potatoes are mostly roasted in oven, but I used a different method this time. I learnt it from a friend and loved the idea of using clay pot for roasting potatoes. We mostly use clay pots for stews as in this Beef Stew in Clay Pot. It gives a very nice smoky flavor to dishes. Roasting something in a clay pot is such a perfect cooking method and you feel like you’re having picnic when eating what you cooked in it.

The best thing to pair with these potatoes is an appetizing yogurt sauce flavored with mint and garlic. These could serve as a fantastic snack this way! You can definitely enjoy it when watching your team's game o your favorite movie.

You need a shallow clay pot for this recipe since all potatoes should touch the bottom. A great smell fills the house when cooking potatoes in a clay pot and there will be something reminding you of some good memories from your childhood. Our grandmas use potatoes very often, right?

Don't worry when you see the bottom of the pot looks like burned, you can easily clean it with hot water after you'red one with it. That burning process gives them that smoky flavor and it makes you feel like you're roasting them on wood fire.

Baby potatoes roasted in a pan and flavored with garlic and rosemary.

Ingredients

Scale
  • 500g baby potatoes
  • 1 head of garlic
  • A handful of fresh rosemary
  • 7 cups water

Instructions

  1. Place potatoes in a shallow clay pot and make sure they all touch the bottom of the pot.
  2. Pour 7 cups water into the pot and bring it to boil over high heat.
  3. When there is a little water left in the pot, bring it to the lowest heat and cook until all water is gone.
  4. Toss in fresh rosemary and garlic cloves.
  5. Roast potatoes until all sides are brown and slightly burned, turning them over when necessary.
  6. Serve hot or warm.
