Roasted baby potatoes always make the best side dish for any meat, chicken or seafood recipes. I love to add these cute babies into several dishes, my favorite is to have them as a side or snack.

Potatoes could be the favorite vegetable for most people in the form of french fries, but I guarantee you will love these roasted baby potatoes as much! Baby potatoes are perfect to roast in oven. You can leave them whole or just halve them and then roast.

About The Ingredients
- Baby Potatoes: They come in different size. They are also called new potatoes or creamers. The smaller, the better when you are planning to roast them whole.
- Olive oil: It gives a nice flavor, but you can use vegetable oil instead.
- Rosemary: We are always after fresh but you can use dried rosemary too. Also, you can substitute it with thyme.
- Garlic: Use them with their skin on. The amount is totally up to you. We use about 10 cloves.
- Seasoning: Sea salt and fresh ground pepper are enough. But you can use more spices if you want.

Roasting baby potatoes in oven is one of the EASIEST thing! Follow the super easy steps below and enjoy.
- Preheat oven to 400F/200C. Line a baking sheet with parchment paper and put it aside.
- Wash the baby potatoes well. If they are small enough, leave them whole. Halve the large ones. Put them on the baking sheet in a single layer. Add in the garlic cloves and fresh rosemary.
- Drizzle olive oil and sprinkle salt and pepper over them.
- Roast for 30 minutes or until golden.
Expert Tips
- If the potatoes are larger than an orange, it's better to halve them.
- We never turn them during roasting, but you might need it depending on your oven.
- You can use large potatoes too, but slice them in wedges or cut in 1-2 inch cubes.
- Store the leftovers in an airtight container in the fridge for 1-2 days.
- To reheat, put them in a baking pan with a drizzle of olive oil and heat in a preheated oven for 5 minutes. Alternatively, you can simply heat them in a frying pan.
