It is possible to change the recipe of this Avocado Lentil Salad according to season. It could absolutely be made of avocado and lentils only, but I love to add some other seasonal ingredients in it. If we were in summer, I would combine avocado and lentils with tomatoes and cucumber, maybe even with watermelon slices. As we are in fall, I made it with spinach, pomegranate and mandarin. Just imagine the combination of these with nutty flavors of avocado and lentils. Super refreshing and warming at the same time! You will feel so energized after having this immune system booster salad!

A super healthy vegetarian glutenfree salad with avocado, lentils, spinach, pomegranates and mandarin.

- 1 cup boiled green lentils
- 1 ripe avocado, chopped
- 1 cup spinach leaves, chopped roughly
- 1 lemon
- 1 teaspoon salt
- 1 tablespoon olive oil, optional
- 4 tablespoons pomegranate seeds
- 2 mandarins, sliced
- Combine all ingredients in a large bowl in no particular order. Leave a little pomegranate seeds and mandarins out for garnish.
- Garnish with pomegranate seeds and mandarine.
- Serve immediately.
