    Zucchini Apple Cinnamon Muffins

    Zucchini Apple Cinnamon Muffins. These are wonderfully moist thanks to zucchini, applesauce, grated apple and yogurt. Plus, cinnamon sugar topping makes a great twist on them. This recipe is surely a fall staple!

    This apple cinnamon muffin recipe is the last recipe with fresh zucchini on Give Recipe this year. Okay I know I've said this before. It's true this time. I promise! No more zucchini recipes till next summer. These zucchini apple cinnamon muffins are so good that I couldn't help sharing the recipe with you.     Zucchini is such a wonderful veggie that it’s really hard for me to stop using it in my cooking and baking. That’s why I’m still having a close relationship with late-summer zucchini.

    How to make muffins moist

    There are three ingredients that help these muffins turn out moist: Apple, zucchini and yogurt. We use apple in two forms: Applesauce and grated apple. You can prefer chopping the apples instead of grating if you want to feel their texture more. As for zucchini, do we really need to talk about how moist anything you bake becomes moist when you add shredded zucchini in it? I think you already know this if you are following this blog for a while. When zucchini and apple come together in a muffin recipe, you should expect that moisture even more. Finally, plain yogurt has a big role in keeping these muffins light, soft and moist. Oh and we don't need much fat when we add yogurt in the batter.

    Combining apple with cinnamon

    Whenever a recipe calls for apple, I just can’t think of it without cinnamon. I think they make the best couple of fall. The tempting smell and flavor of cinnamon wonderfully complement the sweet and tangy flavor of apple. Perfect balance in flavors!  That's the reason why my apple recipes have always some cinnamon in them. You can see a few examples below in case you love this combination as much as I do:

    I used cinnamon both in the batter and as a topping when making these zucchini apple cinnamon muffins. Just mix a little coarse sugar with cinnamon and sprinkle it on the muffins right putting them in the oven. The scent of the cinnamon topping will fill in the whole house and everyone will be hooked!

    These muffins are so moist due to zucchini, applesauce, grated apple and yogurt. Cinnamon sugar topping makes a great twist on these!

    Ingredients

    Units Scale
    • 2 and ¼ cup all-purpose flour
    • ¾ cup sugar
    • 1 teaspoon baking powder
    • 1 teaspoon vanilla powder
    • ½ teaspoon salt
    • 1 teaspoon cinnamon
    • 1 egg
    • 1 cup plain yogurt
    • ¼ cup applesauce
    • 1 tablespoon olive oil
    • 1 cup grated apple
    • ¾ cup grated zucchini, slightly squeezed

    Topping:

    • 2 tablespoons sugar
    • 1 teaspoon cinnamon

    Instructions

    1. Prehet oven to 370F (190C).
    2. Combine flour, sugar, baking powder, vanilla powder, salt and cinnamon in a large bowl.
    3. In another bowl, whisk the egg. Add in yogurt, applesauce and oil.
    4. Slowly pour the dry mixture into the wet one and stir with a spatula until combined. Don’t over mix.
    5. Fold in the grated apple and zucchini and gently stir until these are coated with the batter.
    6. Combine sugar and cinnamon in a bowl for topping.
    7. Share the batter into muffin liners filling each about ¾ the way full.
    8. Sprinkle cinnamon sugar mixture on each and bake for 25 minutes or until a toothpick comes out clean.

      Hi, this recipes sounds great but I have never heard of vanilla powder. Can you use vanilla extract?
