Sumac Roasted Cauliflower Florets

Do you think cauliflower is not a palatable food? You will need to change your mind after trying this Roasted Cauliflower with Sumac! I guarantee everybody will ask for more and you will be making this incredibly tasty cauliflower appetizer again!

We mostly use cauliflower to make Cauliflower Casserole or cook it in a pot with tomatoes and garlic, but when we want to have something more fancy yet simple, we roast it in oven and have this roasted cauliflower as an appetizer rather than a main course. It is a perfect alternative to french fries!

Let’s accept this: Cauliflower and oil love each other, and it’s mostly deep fried to persuade cauliflower haters to eat it, but there is one more way to do this, which is much healthier! Roast it in oven and tell me the difference! We use less oil this way and you don’t have to deal with any mess at all!

It is so easy and simple to make roasted cauliflower that you almost need nothing else but an oven! Olive oil and salt are the two ingredients to roast cauliflower, but I wanted to have my own touch on it and I added a little sumac to the list too! It’s completely optional, and roasted cauliflower is still so tasty without sumac, but I do love the sourish flavor it gives. You can substitute your favorite spice for sumac, chili powder and cumin would work fine too!

It’s great when you have it hot, but I love it more when it gets cold, so it’s up to you to serve it right after cooking or wait for a while.

Cauliflower becomes a very appetizing side dish when roasted.

Ingredients

Scale
  • 300g cauliflower, cut into thin florets
  • 5 tbsp olive oil
  • ½ tsp salt
  • ½ tsp sumac

Instructions

  1. Preheat oven to 200C.
  2. Line a baking pan with parcment paper and place cauliflower slices on it.
  3. Brush both sides of cauliflower discs with olive oil.
  4. Sprinkle salt and sumac on both sides.
  5. Roast them for 20 minutes, turn them over carefully and roast for another 10 minutes.
