Black Beans and Avocado Toasts make quick and healthy breakfast or lunch for busy weekdays. Anything combined with avocado on a toast is up to my alley and I love trying new combinations. These Black Beans and Avocado Toasts make a quick breakfast or lunch.

I boiled the beans myself and they were way too much for the quinoa. I placed some of them in the freezer and used the rest on these tasty and filling toasts.

This is a perfect satisfying vegan meal on hot summer days when you don’t feel like eating heavy meals. It can easily be turned into a gluten-free meal by replacing the toast bread with a gluten-free one.

Ingredients

Scale
  • 2 slices of bread of your choice
  • ½ avocado
  • 4 tablespoons boiled black beans
  • 1 tablespoon chopped green onions
  • ½ lime
  • ¼ teaspoon sea salt

Instructions

  1. Mash avocado and slather it on bread slices.
  2. Top with black beans and green onion.
  3. Sprinkle salt and squeeze lemon on each.
  4. Eat immediately!

    GREAT AND SIMPLE RECIPE. I PUT IT ON HOMEMADE BARLEY OR HOMEMADE BUCKWHEAT BREAD. NO WHITE BREAD!!!

    Hi there! Just wondering you have in the ingredient list "Lime" but in the Instructions you say "Lemon". Which one would you use?

    I have this on my meal prep for next week. The recipe says serving size 2 .. does that mean the recipe is made for 2 days? (just once slice of toast per day?)

    Hi Zerrin. I am eating this right now. It is perfect, I never would have though to eat beans and avocado on bread. I forgot to toast the bread but it is a good rye bread, so I think it's ok like this. I will toast it next time.
