Some of us might prefer just spreading some nutella on a slice of bread and they think it’s the best on-the-go breakfast. We must know that it causes us to get hungry again after a very short time. Why don’t we have a better option that is as easy, quick and yummy as a simple nutella toast then?
These Black Beans and Avocado Toasts are perfectly filling although they have just 5 simple ingredients. They can keep you full for hours and all the nutritional value they have is an extra bonus. Also the refreshing lime juice has a great awakening effect, which is needed by most of us.
Anything combined with avocado on a toast is up to my alley and I love trying new combinations. These Black Beans and Avocado Toasts are inspired by Avocado and Chickpea Sandwich, which is another favorite quick breakfast or lunch of mine. This time I decided to top my lovely avocado with some boiled black beans which were left after I made One Pan Mexican Quinoa. I boiled the beans myself and they were way too much for the quinoa. I placed some of them in the freezer and used the rest on these tasty and filling toasts.
This is a perfect satisfying vegan meal on hot summer days when you don’t feel like eating heavy meals. It can easily be turned into a gluten-free meal by replacing the toast bread with a gluten-free one.

Black Beans and Avocado Toasts
Fast, nutritious and tasty toasts topped with avocado and black beans.
- Prep Time: 5 minutes
- Total Time: 5 minutes
- Yield: 2 1x
- 2 slices of bread of your choice
- 1/2 avocado
- 4 tablespoons boiled black beans
- 1 tablespoon chopped green onions
- 1/2 lime
- 1/4 teaspoon sea salt
- Mash avocado and slather it on bread slices.
- Top with black beans and green onion.
- Sprinkle salt and squeeze lemon on each.
- Eat immediately!
