Pasta with Cheese and Meat Sauce

Easy, cheesy, meaty pasta that is really comforting.

INGREDIENTS
  

  • ½ pound pasta
  • 1 pound ground beef
  • 2 tablespoons olive oil
  • ½ cup finely chopped onion
  • 1 tablespoon tomato paste optional
  • 2 cups pureed tomatoes
  • 6 cloves garlic roughly chopped
  • 3 jalapeno peppers chopped
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper flakes
  • Salt to taste
  • 1 cup shredded mozzarella

INSTRUCTIONS
 

  • Cook pasta in a large pot of boiling water according to package directions. Drain well. Leave some water, you might need to use it in the sauce.
  • Prepare the sauce while the pasta is cooking.
  • Put ground beef in a large pan and start to cook it covered over the lowest heat. Let it release its juice. Bring it to medium high heat and continue cooking uncovered. Stir occasionally.
  • Pour in olive oil and add in chopped onion when there is amost no juice in the pan.
  • Add in tomato paste, pureed tomatoes, garlic and jalapeno. Let it simmer for 10 minutes. Season with black pepper, red pepper flakes and salt. Stir and cook until it gets thick. If you think it’s too dry, add some water in which you boil the pasta.
  • Remove from heat and add in shredded mozzarella. Stir well.
  • Toss in the cooked pasta and serve immediately.
