Parmesan Pasta Recipe

This is a quick and easy pasta recipe. We use fettuccine, parmesan cheese, olive oil, butter, and fresh parsley. It's ready in less than 30 minutes and tastes delicious. Great for busy days or when you want something tasty and simple!

INGREDIENTS
  

  • 250 g dry pasta
  • 3 tablespoons butter unsalted
  • ½ tablespoon olive oil
  • ¾ cup parmesan cheese grated, plus extra for serving
  • ¼ teaspoon black pepper
  • ½ teaspoon salt optional
  • ¼ cup parsley finely chopped

INSTRUCTIONS
 

  • Fill a pot with water. Add in salt (we used 1 teaspoon). When it boils, add the pasta and cook according to the package directions. Reserve half a cup of the pasta water, then drain the rest.
  • In a pan, melt the butter and add in olive oil.
  • Add the cooked pasta, the reserved water. Toss well. Reduce the heat to the lowest.
  • Add the grated parmesan cheese gradually and black pepper, toss until the cheese melts and the pasta is coated well with it.Turn off the heat. Taste the pasta and sprinkle a little salt if you would like. You might not need it as parmesan is already a salty cheese.
  • Now add in chopped parsley.
  • Sprinkle extra parmesan on the top when serving.

NOTES

  1. Cooking the Pasta: Use a large pot and plenty of water to cook the pasta. This helps it cook evenly. Add salt to the boiling water. It gives the pasta flavor. After draining, don't rinse your pasta. The starch on the pasta helps the sauce stick better. 
  2. Using Different Pasta Shapes: Different shapes can have different cook times. Always check the packet for guidance. Taste the pasta before draining. It should be soft but still a bit firm ("al dente").
  3. Adding Parmesan: Grate it yourself. Freshly grated parmesan cheese melts better and tastes fresher. Also, put the cheese in a bit at a time and stir well over the lowest heat. This way, it melts evenly and doesn’t clump. And you will have the perfect pasta with parmesan sauce.
  4. Fixing Dry or Thick Pasta: If your dish gets too thick, add a bit of water or broth until it’s right. Keep stirring your pasta and sauce. This helps everything mix well and keeps the pasta from sticking.
