INSTRUCTIONS
Prepare the mushrooms. Clean them with a slightly damp paper paper towel. Cut them in bite size. You can either remove their thick rubbery stems or leave them.
Melt butter in a heavy skillet over medium-high heat. Place the mushroom pieces in the hot skillet in a single layer. Cook them until golden and flip them over.
Add in crushed garlic cloves with their skin, chopped green onions, salt and pepper. Cook that side until golden too.
Shake the skillet often and reduce the heat when it is needed until golden. Transfer them in a bowl and repeat the same steps for the remaining mushrooms.
Serve immediately.

NOTES
You shouldn't wash or rinse mushrooms. You just need to clean them with a slightly damp paper towel. If you wash the mushrooms under water, they release too much water when you cook them, which is not something desired.
You can either remove the thick stems or leave them. We cook them both ways. The stems are rubbery and chewy, but we are not that bothered.
Don't overload the pan. Fry the mushrooms in batches. Otherwise, they will be steamed.
It's not a good idea to make them ahead of time. They lose their nice texture as they sit, so the best thing is to fry them right before serving.
