Tuna Salad with Chickpeas

A healthy yet filling salad with chickpeas, tuna, tomatoes and cucumbers.

INGREDIENTS
  

Salad:

  • 15 ounces tuna canned
  • 15 ounces chickpeas rinsed and drained
  • ½ cup cucumber chopped
  • ½ cup tomatoes chopped
  • ¼ cup peas canned
  • 1 red onion chopped
  • ¼ cup fresh dill chopped

Shallot Vinaigrette:

  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 1 shallot finely chopped
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

INSTRUCTIONS
 

  • Combine everything for the vinaigrette in a jar and shake well.
  • Mix together the salad ingredients in a large bowl. Toss with the vinaigrette.
  • Season with extra salt if needed and serve.
