Lemon Crinkle Cake Mix Cookies

Super easy lemon crinkle cookies made with cake mix and flavored with lemon juice and lemon zest.

COOK 10 minutes
TOTAL 15 minutes

INGREDIENTS
  

  • 1 box lemon cake mix 15.25 ounce
  • 2 eggs
  • cup vegetable oil olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • cup powdered sugar

INSTRUCTIONS
 

  • Preheat oven to 375F/190C. Line a baking sheet with parchment paper.
  • In a mixing bowl, whisk together cake mix, eggs, oil, lemon juice and lemon zest.
  • Chill the dough for 30 minutes (optional).
  • Make balls and drop them into a bowl of powderd sugar. Coat all sides with powderd sugar.
  • Place them on the prepared baking sheet and bake for 10 minutes.
  • Let them cool on the baking sheet for 2 minutes and then transfer to a cooling rack.
