Cake Mix
- 2½ cups all purpose flour
- 1 cup sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
Lemon Cake
- 3½ cups cake mix
- 2 eggs
- 1½ cups buttermilk milk, kefir or yogurt works fine too
- ⅓ cup oil
- 1 teaspoon lemon zest
- 1 teaspoon lemon juice
Cake Mix
Put all the ingredients in a large bowl, whisk them up well.
Put in an airtight container or in a mason jar.
Lemon Cake
Preheat oven to 350F/175C. Butter a bundt cake pan very well.
In a large mixing bowl, whisk together eggs, buttermilk, oil, lemon zest and lemon juice.
Gradually add in the cake mix using a hand whisk just until everything is combined.
Pour it into the prepared pan and bake for about 45 minutes or until a toothpick inserted in the center comes out clean.
Remove from the oven and let it cool down for 10 minutes. Remove from the pan and let it cool completely over a wire rack.
