Turkish Bulgur Salad (Kisir)

A salad packed with deliciously hearty and well-balanced flavors!

Kisir is refreshing, spicy, tangy and loaded with herbs. You can't stop once you start eating this salad. It is very easy to make and the leftovers taste even better.

Let’s get started!

Ingredients

Fine bulgur Spices Boiling water Olive oil Onion Tomato paste Red pepper paste Lemon Pomegranate Molasses Tomatoes, cucusmber, herbs

Prepare the bulgur:

Combine the bulgur, and spices in a large bowl. Pour boiling water over them and stir. Cover the bowl with a kitchen towel and let it sit for 10 minutes.

Prepare the sauce:

Sauté the chopped onion in oil oil until translucent. Add the tomato paste (and red pepper paste if you want). Stir well and let it to cook for 1-2 minutes.

Combine the sauce & soaked bulgur:

Once the soaked bulgur has risen sufficiently, add in the cooked onion mixture. Stir these together very well.

Add the tangy ingredients:

Add the lemon juice and pomegranate molasses. Keep mixing it well until the liquid ingredients are evenly absorbed.

Assemble:

Fold in the finely chopped herbs, tomatoes and cucumbers. Toss well.

Serve:

Garnish your salad with pickles, sliced tomatoes, and sliced cucumbers. Serve it with freshly washed lettuce leaves on the side.
