Snap off the stem at the top and pull down the string to unzip the pod. Run your thumb along the inside the pod and remove all the beans.
Make a small slit on one end. This will make shelling the beans easier. Soak the beans in boiling water (removed from the heat) for 10 minutes. Rinse under cold water.
Gently squeeze each bean and then pull the skin from both sides. This will cause the bright green inner bean to slip out of its skin. Peel all the beans in the same way.
Let them cool completely. Store them in an air tight container in the refrigerator for 3-4 days. You can also keep them in the freezer for 6 months.
