Simply grill the cinnamon sugar coated peaches and serve with ice cream.

Ingredients

  • ½ tablespoon butter
  • 3 ripe (but not over ripe) peaches, halved and pits removed
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • 6 dollops of vanilla ice cream
  • Fresh mint leaves for garnish
  • 2 teaspoons ground pistachio, optional

Instructions

  1. Heat a grill pan over medium low heat. Melt butter in it and coat the bottom very well with it using a brush.
  2. In a small bowl, combine brown sugar and cinnamon. Coat the cut side of peaches with this mixture and directly place them cut side down in the pan. Cook them for 4-5 minutes and then turn them over. Cook for another 3 minutes or until soft.
  3. Serve warm with a dollop of ice cream and garnish with mint leaves and pistachio.
