Cake Mix
- 2 and 1/2 cup all purpose flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
Lemon Cake
- 1 batch cake mix (3 and 1/2 cup)
- 2 eggs
- 1 and 1/2 cup buttermilk (milk, kefir or yogurt works fine too)
- 1/3 cup oil
- 1 teaspoon fresh lemon zest
- 1 teaspoon lemon juice
Instructions
Cake Mix
- Put all the ingredients in a large bowl, whisk them up well.
- Put in an airtight container or in a mason jar.
Lemon Cake
- Preheat oven to 350F/175C. Butter a bundt cake pan very well.
- In a large mixing bowl, whisk together eggs, buttermilk, oil, lemon zest and lemon juice.
- Gradually add in the cake mix using a hand whisk just until everything is combined.
- Pour it into the prepared pan and bake for about 45 minutes or until a toothpick inserted in the center comes out clean.
- Remove from the oven and let it cool down for 10 minutes. Remove from the pan and let it cool completely over a wire rack.
