Although some of us may have filled up on cookies at this time of year, I think there’s always room for more. After making tons of Meltaway Christmas Cookies, it’s still exciting for me to try new cookies like these vegan peanut butter cookies. They are the perfect dessert to whip up when you want something sweet, easy and relatively healthy. They’re also incredibly easy to adjust to every taste and diet. Read on for a gluten-free version, a three-ingredient interpretation and even ways to incorporate chocolate into the recipe.
How to Make Easy Vegan Peanut Butter Cookies
These super simple vegan peanut butter banana cookies could not be easier to make. First, combine all the dry ingredients in a bowl. Then add the remaining ingredients: peanut butter, mashed banana and vanilla extract. Next, simply mix the ingredients together until evenly combined and refrigerate for 30 minutes. If you’d like, you can speed up the process by freezing the dough for 5 minutes instead. You can also substitute apple sauce for the mashed bananas. If you’re making this swap, simply follow the same steps.
Once the cookie dough is chilled, pull off pieces and roll into balls. Using your hands or the bottom of a tablespoon, press down on each cookie ball to slightly flatten before placing on the baking sheet to bake for 10 to 12 minutes.
While the cookies are baking, set a heatproof bowl over a pot of simmering water. Make sure the water does not touch the bottom of the bowl, as this will scorch the chocolate, and add the chocolate to the bowl. Stir to melt completely and then remove from the heat. Let both the vegan peanut butter cookies and the chocolate cool slightly before drizzling the chocolate over the cookies.
Are These Vegan Peanut Butter Cookies Gluten Free?
This vegan peanut butter cookie recipe is not technically gluten free but can easily be adjusted for a gluten-free diet. Simply use oat flour, almond flour or any other gluten-free flour instead of the all-purpose and whole wheat flour in the recipe.
How to Make Vegan Chocolate Peanut Butter Cookies
To turn these cookies into vegan chocolate peanut butter cookies, leave out a tablespoon of the all-purpose flour and replace it with a tablespoon of unsweetened cocoa powder. You can also make vegan peanut butter chocolate chip cookies by just mixing in chocolate chips or your favorite chopped chocolate when you add the peanut butter, banana and vanilla.

If you’re short on time and ingredients, make these easy vegan peanut butter cookies even simpler than they already are by using just the peanut butter and salt and adding a sweetener like maple syrup or agave. And although it will have a very different texture from the recipe that uses flour, they taste great and are a hit with my family.

Vegan Peanut Butter Cookies with Chocolate Drizzle

- 1 cup peanut butter
- 1 teaspoon baking soda
- 3 tablespoons all purpose flour
- 3 tablespoons whole wheat flour
- ½ cup and 1 tablespoon sugar
- 4 tablespoons banana, mashed (or applesauce)
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
- Combine dry ingredients in a bowl. Add in all the remaining ingredients and stir to make a dough.
- Refrigerate the dough for 30 minutes.
- When the dough is chilled, heat to 350F. Line a baking sheet with parchment paper.
- Roll the dough into 1 inch cookie balls.Place them 2 inches apart on the prepared baking sheet. Using your hand, gently press them down until a little flattened.
- Bake for 10 minutes. Let them cool for 5 minutes on the baking sheet and then transfer to a wire rack to cool completely.
