Amazingly yummy, moist and nutty vegan banana bread.

Ingredients

  • 2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon allspice
  • 1/2 cup almond milk
  • 1 teaspoon apple vinegar
  • 1/2 cup sunflower oil
  • 3/4 cup sugar
  • 1 cup mashed ripe banana
  • 1 teaspoon vanilla extract
  • 1/2 cup walnuts

Instructions

  1. Preheat oven to 350F (180C). Line a 9x5 inch loaf pan with parchment paper.
  2. In a large bowl combine flour, baking soda, salt and spice.
  3. In a small bowl combine almond milk and apple vinegar, put aside.
  4. In another bowl mix sunflower oil and sugar. Add in mashed banana, vanilla and almond milk-vinegar mixture.
  5. Add the wet ingredients to the flour mixture. Stir in the walnuts. Don’t overmix, stir until just combined.
  6. Pour the batter in the loaf pan and bake for 1 hour 15 minutes or until a toothpick inserted in the center comes out clean. Just check it after 60 minutes as oven temperatures might differ.
  7. Remove the pan from the oven and place it on a cooling rack for 15 minutes and then remove it from the pan.
