Omelette with sun dried tomatoes

Ingredients

  • 2 tsp butter
  • 2 eggs
  • 6 pieces sundried tomato
  • A pinch of chili powder
  • A few sprigs of fresh mint

Instructions

  1. Wait sun-dried tomatoes in hot water for a few minutes until soft.
  2. Whisk 2 eggs in a bowl.
  3. Heat a pan and melt butter in it.
  4. Pour egg mixture in the pan and add sun-dried tomatoes right after the mixture.
  5. Sprinkle a pinch of chili powder.
  6. Cook your omelette just for 2 minutes or so, don’t overcook it.
  7. Transfer it on a plate and garnish it with fresh mint leaves.
