Turkish style Sun Dried Tomato Omelette has the most unique flavor ever. Whisked eggs and sun dried tomatoes are combined in a pan with butter to make the breakfast or brunch of your dreams.

Are you a breakfast person or one of those eating nothing in the morning? Some people prefer just a cup of coffee for breakfast and they don’t eat anything until lunch. They don't think of making omelette or preparing another breakfast food.
Although doctors always remind us how important the first meal of day is, not many people care about this. I'm sure if there is enough motivation, everyone will want to have breakfast. What motivates you depends on your taste. Maybe a good music will help you wake up and feel happy, which leads to a good breakfast.
If you are following this blog for some time, you know I’m absolutely not that kind! Everyone around me knows my love for breakfast…well big breakfast! I never snack on a few things and then leave for work, not my style! I wake up early to have enough time for preparing a good breakfast which helps me get motivated for the new day. And my favorite breakfast food is egg, any version of it!
During weekdays, I prefer soft boiled egg and I sometimes make Turkish menemen or omelettes with different ingredients. Here is another omelette with sundried tomatoes. I made it for our Sunday brunch this weekend. If you are not that passionate about having breakfast, you can still try this omelette for lunch. My sundried tomatoes are already salty, so I didn’t add any extra salt to omelette. But you are always welcome to sprinkle some feta cheese crumbles on it.

Sundried Tomato Omelette
Omelette with sun dried tomatoes

Ingredients
- 2 tsp butter
- 2 eggs
- 6 pieces sundried tomato
- A pinch of chili powder
- A few sprigs of fresh mint
Instructions
- Wait sun-dried tomatoes in hot water for a few minutes until soft.
- Whisk 2 eggs in a bowl.
- Heat a pan and melt butter in it.
- Pour egg mixture in the pan and add sun-dried tomatoes right after the mixture.
- Sprinkle a pinch of chili powder.
- Cook your omelette just for 2 minutes or so, don’t overcook it.
- Transfer it on a plate and garnish it with fresh mint leaves.
