Sun-Dried Tomato Sauce

An amazing sauce made with sun-dried tomatoes, garlic and spices. Use it in sandwiches, salads or in pasta recipes.

Ingredients

  • 10 sun dried tomatoes (100g)

  • 2 cloves garlic

  • 1 tbsp vinegar

  • 1 teaspoon pomegranate molasses

  • 3 tablespoon olive oil

  • 1 tablespoon tomato paste

  • A pinch of salt

  • 1 teaspoon paprika

  • 1 teaspoon thyme or oregano

Instructions

  1. Soak dried tomatoes in hot water for 10-15 minutes. This will help soften the dried tomatoes.

  2. Chop the tomatoes well and transfer into a mixing bowl.

  3. Mash the garlic and add that in the bowl.

  4. Add in all the remaining ingredients and mix well. 

  5. Either serve it as an appetizer or keep it in an airtight container or a jar in the refrigerator for up to 2 weeks.

Notes

  • You don’t need to soak the dried tomatoes if you are using sun dried tomatoes in oil in jars. They are already soft.
  • You can add cream cheese or Greek style yogurt in the mixture if you like. But then the storage time is shorter.

  • You can play with the spices in it to your liking.
