Stuffed Eight Ball Zucchini |

8 ball zucchinis stuffed with ground beef, bulgur, herbs and spices.


  • 6 eight ball zucchini


  • 150g ground beef
  • 100g bulgur
  • 2 onions, chopped
  • 2 tomatoes, chopped
  • ½ tbsp tomato paste
  • 3 tbsp olive oil
  • ½ lemon, squeezed
  • 4 cloves garlic, chopped
  • ¼ bunch of parsley, chopped
  • ¼ bunch of fresh dill, chopped
  • a few fresh mint sprigs, chopped
  • ground black pepper to taste
  • salt to taste


  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 cup water


  1. Cut the tops of zucchinis and peppers, but do not throw them away. Scoop out the insides of zucchini.
  2. Mix all ingredients for the filling in a bowl and stuff zucchinis with this mixture. Do not overfill them, leave about ½ inch to their tops as bulgur will rise when cooked. Place stuffed vegetables into a pot.
  3. To make the sauce, mix tomato paste, olive oil and water. Pour it over the stuffed veggies. Cook it over medium heat for about 40 minutes until they get soft enough.
  4. Serve warm with a dollop of yogurt.
