Strawberry Spinach Salad is a very simple yet nutritious and refreshing treat that can easily be served as a side on busy days. It is one of the perfect spring and summer treats. As we are finally having spring days here, we should enjoy it as much as we can, even in the kitchen. Maybe one of the best places to enjoy spring. Crispy spinach and snow peas are combined with wonderful smelling fresh strawberries and topped with raw almonds in this salad. The only flavor they need is some fresh lemon juice to become the world’s easiest and the most refreshing raw salad.
I love to use raw spinach in salads since I think its wonderful taste stands out more this way. One of my favorite snacks is a simple spinach sandwich. Place a few spinach leaves on a slice of bread, sprinkle a pinch of salt, squeeze lemon on it and it’s ready! Just in a minute. If we have avocado, I add it too, either mashed or sliced. The easiest, tastiest and healthiest snack or even lunch. Fast but healthy. Do you have such one-minute or less recipes that are healthy at the same time? If I have a little more patience and time, I make Spinach and Avocado Sandwich, combining spinach, avocado, cheese and pickled jalapeno peppers. Still simple, isn’t it?
I mostly combine spinach with other herbs that are commonly used in salads like lettuce or arugula but this time I wanted to make spinach the main food in this Strawberry Spinach Salad. And I combined it with another raw vegetable, snow peas. They were so fresh and sweet that I didn’t even need to saute them. I just toss everything in a bowl, add salt and lemon juice and combine using my hands.
The flavors are very well balanced. The sweetness of peas and strawberries complement the herbal flavor of spinach and tartness of lemon juice. Nutty flavor of almonds gives a wonderful final touch. No need to mention the perfect spring color in the bowl.

Strawberry Spinach Salad
Fresh and colorful spinach salad is perfect for spring!

- 5 cups fresh baby spinach
- 1 cup fresh snow peas, trimmed
- 1 cup fresh strawberries, hulled and sliced
- 1/4 cup raw almond
- 1/2 teaspoon salt
- 1 lemon, squeezed
- Combine spinach leaves, snow peas, strawberries, almonds in a bowl.
- Add in salt and lemon juice. Combine well and serve.
