When we start to see the signs of spring outside, we start to make lighter recipes for lunch and dinner. Somehow these recipes are mostly great for picnics too. Could it be because we have weekend picnic plans in our mind? No doubt about it! Salads are our perennial favourite in casual picnic parties and we love to create new salad recipes each time. To my surprise, salads can easily become the hit of a picnic even if it’s a barbecue party. This Strawberry Pasta Salad is no exception. We love the fresh taste of spring in this bowl!
So how did I come up with the idea of adding strawberries into a pasta salad? I was so tempted by the beauty of fresh strawberries that I could use them in any recipe. Okay I can’t stop thinking of Strawberry Chocolate Cake, but why are we more likely to use strawberries in desserts? They have such a nice flavour that I think they can make any savoury recipe even tastier too.
Everyone loved the sweet red surprise in this pasta salad. They first thought those were cherry tomatoes and they had a nice smile once they noticed that they were strawberries. A fun twist, isn’t it?
I wanted to reflect the positive energy of the season in a salad bowl and I think this Strawberry Pasta Salad fits the bill perfectly. I know you already love our Cucumber Lemon Orzo Salad (our summer favourite too), but let’s make our salad with spring colours this time.
This Strawberry Pasta Salad is packed with my favourite salad ingredients. The crunchiness of herbs, cucumber and purple cabbage gives the feeling of refreshment. You feel like summer is around the corner. The subtle sweetness of strawberries match wonderfully with salty capers tossed in the salad. The final touch is made with the yogurt dressing.
Most pasta salads are overly heavy with dressing because they contain lots of mayonnaise. I don’t like the “creaminess” of those salads. With the tangy Greek yogurt dressing, this Strawberry Pasta Salad is super light, yet as yummy as those creamy pasta salads with mayo. Greek yogurt, a little lemon juice and dried mint in the dressing make the salad phenomenal. This creamy and light mint yogurt dressing is something every salad needs, especially when it’s spring time.
Everything comes together so quickly and the salad is on your table in less then 15 minutes.
I always serve the salad with a small bowl of extra yogurt dressing so that those who want to have even more creaminess (meaning more yumminess!) can add it as they desire.
Yields 4 servings
A lighter and healthier version of creamy pasta salad. Strawberries and greens in the bowl give a nice fresh taste of spring.

- 8 ounces Ditalini pasta
- 2 tablespoons olive oil
- 1 cup chopped cucumber
- 4 leaves lettuce, torn roughly
- 1 cup arugula, torn
- 1 cup strawberries chopped
- 3 tablespoons capers
- ½ cup purple cabbage, chopped
- Juice of ½ lemon
- ½ cup Greek yogurt
- 2 tablespoons lemon juice
- ½ tablespoon olive oil
- 2 tablespoons water
- A pinch of salt
- 1 teaspoon dried mint
- Cook pasta in a large pot of boiling salted water until al dente. Drain and rinse under cold water. Drizzle 2 tablespoons olive oil over it and stir.
- In a large bowl, toss cooked pasta with cucumbers, lettuce, arugula, strawberries, capers and cabbage. Squeeze half lemon over it.
- In a small bowl, whisk together Greek yogurt, lemon juice, olive oil, water, salt and dried mint. Pour the dressing as much as you desire over pasta salad and serve.
