Spicy Pineapple Salsa

Spicy Pineapple Salsa is one of the best combination of flavors. Sweet, tangy and hot flavors are very well balanced in this salsa, which I think a great spring recipe. You will feel the bursting of all these flavors in your mouth.

This is the first time I’ve used pineapple in salsa, but won’t be the last time. It gives a perfect freshness with a lovely sweetness to salsa.

I think salsa is one of the best Mexican recipes and what I love about it is it is very easy. Just toss everything in a bowl and combine well. Also, you can play with the ingredients as you wish. I love the Classic Mexican Salsa, the recipe of which you can find on one of my favorite food blogs that is full of wonderful Mexican recipes. But I love to make some twists on the classic from time to time. Tangy Tomato and Corn Salsa is one of our favorites when all ingredients are in season. Can’t wait for summer to make this salsa as often as I can!

I used three main ingredients for this Spicy Pineapple Salsa. Pineapple, red onion and cilantro. But what makes this salsa that special is the dressing. I used Homemade Pomegranate Molasses in it besides lemon, so it has a very nice sweet-sour touch. If you can’t find pomegranate molasses, you can leave it out, it is still wonderful. But I recommend you to make it yourself if you can find sour pomegranates in your area. Any salad dressing will become tastier with it.

We loved this Spicy Pineapple Salsa as much as our corn salsa, and it has almost become the only way for me to eat pineapple. I normally find it too sweet, but it matches wonderfully with sourness of lemon, bitterness of red onion and hotness of chili when used in this salsa. You can serve it just as it is or with nachos to make your treat even more Mexican. I think this salsa could even make a wonderful sandwich filling. Will definitely try it that way next time.

Ingredients

Scale
  • 2 cups diced pineapple
  • ½ cup chopped red onion
  • ½ cup chopped cilantro
  • 1 lemon, squeezed
  • 1 tablespoon pomegranate molasses
  • 1 teaspoon chili
  • Salt to taste

Instructions

  1. Combine pineapple, red onion and cilantro.
  2. In a small bowl, whisk lemon juice, pomegranate molasses, chili and salt well. Pour it over the pineapple and onion mixture. Stir well. Taste and add extra salt or chili if needed.
