My students have always wanted me to share recipes special for students. What does that “special for students” mean? As these are college students, most of them have to leave their families and start a new life here staying alone or with their friends. Since their mom is not with them, they have to learn how to cook. As they don’t have much time, they try all versions of pasta. They say it’s easier and cheaper, but it becomes boring after eating it like hundreds times! They ask for a recipe that doesn’t require much time, yet tasty and filling, besides enough for a crowd. I’m dedicating these Roasted Potatoes with Sausages to all my students who are into cooking and trying new recipes!

I made it for breakfast, but it was too much for two of us and we had lots of leftovers, so we had it for dinner too. I just heated it in a skillet and made some fresh Shepherd’s Salad and Homemade Ayran, which is a very refreshing healthy yogurt drink to serve with it, the quickest dinner ever!

You just need three ingredients for this easy and quick recipe: potatoes, sausages and kasar cheese. You all need to combine the first two and bake at 190C. Add the cheese as a final step right before taking it from oven. I used Turkish kasar cheese with these roasted potatoes with sausages, but you can use any other melting cheese of your favorite.

I used Turkish spicy sausages, which we call sujuk. As it contains fat, I don’t need to add any extra oil when roasting. If you use regular plain sausages, add 2-3 tablespoons olive oil and mix them well.

As the sausages I use is already spicy, I don’t use many spices with it, just a little thyme is enough. If your sausages are not spicy, you can season the mixture with cumin, black pepper, paprika and a little minced garlic.

Ingredients

Scale
  • 4 potatoes, diced
  • 250g sausages, diced
  • 1 teaspoon thyme
  • ½ teaspoon salt
  • 4 tablespoons kasar cheese, grated ( you can use parmesan or mozarella too)

Instructions

  1. Preheat oven to 190C.
  2. Line a baking pan with parchment paper.
  3. Combine diced potatoes, sausages, thyme and salt in a bowl.
  4. Put these in the baking pan and bake for 55 minutes.
  5. Take it from oven and toss in grated cheese on the top and bake for another 5 minutes or until the cheese melts.
  6. Serve warm.
