Raw Zucchini Rolls
Raw zucchini rolls stuffed with feta, spinach and red bell pepper. Perfect appetizer!
- Prep Time: 10 minutes
- Total Time: 10 minutes
- Yield: 6 1x
- 2 zucchinis
- 1/2 cup crumbled feta
- 3–4 leaves spinach, thinly chopped
- 1 red bell pepper, chopped into thin matchsticks
- Half lemon when serving
- Slice the zucchinis using a vegetable peeler.
- Lay the zucchini strips and put a little feta, then spinach and red bell pepper.
- Roll them up and leave a few drops of lemon on each when serving.
