Pumpkin Pineapple Smoothie has just three ingredients which will boost your immune system. Besides pineapple and pumpkin, I added fresh ginger into this smoothie to make it more suitable for winter or early spring when we get sick easier and we need to involve more vitamins and health booster foods in our diet.
Smoothie is never a breakfast food for me, I love it as a snack. I love to prepare different smoothies using just what we have in the kitchen. This is what I love about making smoothie. You don’t have to follow a certain recipe, you can always create your version. I think smoothie recipes are for inspiration, so you don’t have to stick to the measurements I give in the recipe. Mix the ingredients, taste and adjust if needed.
This Pumpkin Pineapple Smoothie came out when I realized a bag of Homemade Pumpkin Puree in the freezer. I was in need of a cure for my cold and decided to make a smoothie using pineapple and fresh ginger. I knew it would be a good health boosting combo but I needed something for a better color. Well, yes how my smoothie looks is important for me and I checked the fridge to see what we had. I was looking for something that would make my healing smoothie look orange or yellow. When I saw the frozen pumpkin puree, I didn’t think twice and added some into the blender until I had the color I wanted. So you can increase or reduce the amount of the pumpkin puree to your color taste.
I don’t think this Pumpkin Pineapple Smoothie needs anything else, it is really tasty with these three ingredients, but you might need to add a sweetener like honey or agave if the pineapple you use is not sweet enough. Mine was sweet enough, so I didn’t add any. What I did instead was to garnish my healthy smoothie with some crushed candy cane just for fun. If you want to stick with the healthy side of this smoothie, omit the garnish.

Pumpkin Pineapple Smoothie
A health boosting smoothie with pineapple, pumpkin and fresh ginger.

- Yield: 3
- 2 cups diced fresh pineapple
- 1/2 cup pumpkin puree
- 1 tablespoon grated fresh ginger
- Crushed candy cane for garnish
- Blend all ingredients except candy cane pieces until smooth.
- Share into glasses and garnish with crushed candy cane.
- Serve immediately.
