We don’t need to bake to feel the fall flavor in your kitchen. These vegan and gluten-free no-bake Pumpkin Oatmeal Energy Balls perfectly satisfy our fall cravings.
If you are following our blog for some time, you probably know my obsession with pumpkin and zucchini. I’m never bored of these two. After enjoying lots of zucchini recipes for a couple of months, it’s time for celebrating pumpkin now! Although I LOVE baking with pumpkin, I’d like to give a start with a super easy recipe this year. Believe it or not, these pumpkin oatmeal energy balls are ready in 30 minutes, chilling time included. Plus, you need only 6 ingredients to make these flavor packed bites. Best of all, you just need one bowl and no baking is required. All you need to do is to combine oats, pumpkin puree, cinnamon, apricot, flax seeds and maple syrup in a bowl, make balls and chill them.
We are very close to fall, which is my favorite season and I’m so much into making pumpkin based recipes. As a person who loves to make things from scratch, I made our first batch of Fresh Pumpkin Puree with the first pumpkin I bought last weekend and put it in bags to store in the freezer. It is great to have ready pumpkin puree for later use. I just thaw a bag of it when I need some pumpkin puree for baking, cooking or for an easy snack like these pumpkin oatmeal energy balls.
What I love about this recipe is that it is pretty customizable. You can substitute pumpkin seeds, sesame seeds or any other seeds you love for flax seeds and dried berries for apricot. I use maple syrup in this recipe just because I love it with pumpkin and cinnamon flavors, but you can use agave syrup instead. If you aren’t vegan, you can even use honey.
Finally, as a person who loves garnishing such treats, I topped my oatmeal energy balls with dried rose petals, but that’s totally optional.Print
Pumpkin Oatmeal Energy Balls
A simple and healthy combination of oats and pumpkin puree in the form of balls.

- 2 cups rolled oats
- 1 cup pumpkin puree
- 1 teaspoon cinnamon
- ¼ cup dried apricot, chopped
- 2 tablespoons flax seeds
- ¼ cup maple syrup
- rose petals for garnish, optional
- Combine all ingredients in a large bowl until they hold well in a ball. You can add extra pumpkin puree or oats if needed.
- Chill for about 20 minutes.
- Line a baking sheet with parchment paper and roll the mixture into 23 balls.
- Optionally, you can top each ball with rose petals and serve immediately.
- You can store in a covered container in the refrigerator up to a week.
