Pumpkin Oatmeal Chocolate Chip Cookies

Moist and chewy vegan pumpkin cookies packed with chocolate chips an oats.




  1. Preheat oven to 350F. Line a baking sheet with baking paper.
  2. In a medium bowl, combine flour, oats, sugar, baking powder, salt, cinnamon and nutmeg. Mix until combined.
  3. In another bowl, mix together molasses, pumpkin puree and oil.
  4. Add the pumpkin puree mixture into dry ingredients and stir until combined. Don’t overmix. Fold in chocolate chips.
  5. Using a tablespoon, drop cookie dough on the baking paper and bake for 13 minutes or until the edges are golden.
  6. Remove from oven and transfer on a wirerack to let them cool completely.
  7. Insert a few extra chocolate chips on each when they are still warm.
