A wonderful combination of sweet and savory on bread slices. Use an amazing green sauce with avocado, spinach and mint leaves as spread. Top with caramelized peach, feta and red onion. Perfection!

  1. Puree avocado, spinach and mint leaves in a food processor.
  2. Add in lemon juice, olive oil and salt and mix well. Put the sauce aside.
  3. Coat diced peach with honey.
  4. Heat a non stick pan and toss in honey coated peaches.
  5. Cook them until caramelized stirring occasionally over low heat for about 10 minutes.
  6. Rub thinly chopped onion with sumac and put aside.
  7. To prepare the bruschetta, spread the green sauce on bread slices. Then top them with caramelized peach, feta and onion in this order.
  8. Serve immediately.
