One Pot Not Skinny Zucchini Pasta
Creamy pasta with zucchini. Easy, quick and so tasty! The best recipe to include zucchini in your diet!
- Prep Time: 5 minutes
- Cook Time: 15 minutes
- Total Time: 20 minutes
- Yield: 4 1x
- 8 oz. Spaghetti
- 2 and 1/2 cup water
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 6 cloves garlic, roughly chopped
- 1 large zucchini, quarted
- 1/2 teaspoon ground black pepper
- 1/2 cup heavy cream
- 1/2 cup shredded mozzarella
- Combine spaghetti, water, salt, olive oil, garlic, zucchini and black pepper in a pot over medium high heat.
- Bring to boil and then let it simmer over medium low heat uncovered until pasta absorbs almost all the water, about 10 minutes.
- Add in heavy cream and shredded mozzarella, stir once or twice. Cover the pot and remove it from the stove. The heat inside will help the cheese melt.
- Serve when it is still hot.
