No Bake Caramel Coconut Bites disappear really fast. Just sayin’. Bite-sized sweet treats are always a hit and they are even better if they have caramel inside and fancy sprinkles outside. They easily become wonderful party foods as well. Caramel and coconut are one of the best pairs I’ve discovered so far. Also, these are wonderful treats for those who have a gluten-free diet.
I thought what else I could make with coconut since I made Flourless Pistachio Cookies and 3 Ingredient Coconut Macaroons. Okay, I admit I have gone a bit obsessed with coconutty treats and I have a good reason for this. For one thing, I love the fresh flavor of shredded coconut. It is unexpectedly juicy when eating and I do love this. Second, it is really easy to make something with it either raw or baked. There are endless combinations that you can make using this great ingredient.
The lucky ingredient to pair with coconut is caramel this time and I have no doubt that it is very happy about this match. These caramel coconut bites don’t require any baking, which makes them one of the fastest sweet treats. For the caramel sauce recipe, please see Bree’s wonerful homemade Caramel Sauce.
No Bake Caramel Coconut Bites will definitely satisfy your sweet cravings. You can just prepare it in a matter of minutes and enjoy. These can be kept in the fridge for about a week. I’m not sure if they remain that long though. You just can’t stop once you have one.
