  • Juice of a lemon, plus a few slices as garnish
  • 1 1/2 teaspoon garlic powder
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon black pepper
  • 6 fillets of tilapia, defrosted
  • 1 tablespoon fresh chives, chopped

For the Black Bean Salsa:

  2. Make the dressing by whisking together the olive oil, lemon juice, garlic powder, salt and pepper in a bowl.

  5. Bake 10-12 minutes or until fish flakes easily with a fork.

To Make the Black Bean Salsa:

  1. Bring a small pot of water to a boil. Add the corn and cook until tender enough, 3-5 minutes. Drain.
  2. Mix together all of the ingredients including corn in a bowl.

To assemble:

  1. Place each fillet on a plate, garnish with the salsa and serve.
