Fresh Corn Peach Salsa

Not an overly sweet fruit salsa made with fresh peaches, corn, tomatoes, peppers and onion.

Ingredients

  • 1 large ripe peach, peeled and diced
  • 3 large not too ripe peaches, diced
  • ½ cup corn
  • 2 large tomatoes, diced
  • 1 red bell pepper, finely diced
  • 1 green chilli peppers, chopped
  • ¼ cup red onion, diced
  • 1 tablespoon fresh thyme
  • ½ teaspoon salt
  • 1 tablespoon olive oil
  • 1 and ½ tablespoons lemon juice

Instructions

  1. Combine everything except salt, olive oil and lemon juice,
  2. Whisk together lemon juice, olive oil and salt. Pour it over the salsa and give it a good stir and serve.

Notes

It tastes great on the day it is made but you can keep the leftovers in a container with a tight lid for another day.
