Eggless Strawberry Ice Cream

I finally bought an ice cream maker and made this Eggless Strawberry Ice Cream. This is my first ice cream and you can’t imagine how exciting it was! I’m absolutely in love with my new toy and I might make hundreds of ice cream this summer. If you are in my city or happen to come, do visit us to grab my homemade ice cream as much as you like! What stimulated me to buy an ice cream maker is Ayşegül’s fantastic looking Biscoff Walnut Ice Cream on her lovely blog Foolproof Living. I had wanted to make ice cream with or without machine since last summer, but I was too much busy with our precious bundle of joy and just postponed it. Leaving winter behind, refreshing recipes have started to appear on my favorite blogs, which are all inspiring. Ayşegül’s biscoff walnut ice cream was one of them and I wanted to try her recipe. So much!

I wasn’t sure whether an ice cream maker is really necessary and asked her. She persuaded me saying that she’s tried making ice cream without an ice cream maker many times and she thinks they are not as creamy. Well, I was after real ice cream! Also, I thought Göktürk will be happy seeing her mom making ice cream at home when he grows. So all these helped me make my mind and I bought it the next day. I need to practise a lot until Göktürk starts to eat ice cream!

The recipe for this Eggless Strawberry Ice Cream is taken from the manual of the machine. Yusuf suggested trying the recipe of the machine first as we didn’t want to fail at our first try. The recipe is an easy one as it calls for whipping cream, which is known as kremşanti in Turkey.

So after preparing the ice cream mixture, it was time to run the ice cream maker now. We put the mixture in it and churned. The manual suggested a 20-minute churning, but the sound of it started to change after 15 minutes meaning it became hard to churn. We stopped it and let the mixture to fall into a container. It was a bit thicker than expected, so we should have stopped it 1-2 minutes earlier.

Our first strawberry ice cream was almost ready. The kitchen was smelling like ice cream. We were on the right way! We couln’t wait any more and tasted. Yummy! We succeeded! We froze it overnight and we curiously took it from the freezer in the morning, waited for some minutes and tasted for the second time. It doesn’t have the creaminess I wanted, but tasted as good as store bought ice creams.

Eggless strawberry ice cream is my first try, but will not be the last. I will be trying different ice cream recipes soon; with eggs, yogurt or cornstarch. I can’t wait to create my own ice cream with my favorite ingredients! Stay tuned if you are an ice cream person!

Easy strawberry ice cream as tasty as store bought ones!

Ingredients

Scale
  • 1 cup strawberries, hulled and quarted
  • 55g powdered sugar
  • 1 cup whipping cream

Instructions

  1. Puree strawberries.
  2. Mix whipping cream and sugar.
  3. Stir in strawberry and mix well.
  4. Chill it for 20 minutes.
  5. Transfer it into the bowl of an ice cream maker and freeze according to the manufacturer’s instruction. We churned it for 13 minutes.
  6. Return the mixture into an airtight container and freeze at least for 5 hours.
