Egg and Avocado Toast

Egg and Avocado Toast is my favourite simple lunch. You don't need more than 5 ingredients and ready in 5 minutes!

I told in my several posts that avocado is not very common in Turkish cuisine, but as we do love this healthful vegetable (or fruit?), I love to try new recipes with it. I saw the combination of egg and avocado in many recipes, so I wanted to make this scrumptious Egg and Avocado Toast.

Although this egg and avocado toast looks like a breakfast food, I made it as an appetizer before lunch. It might sound weird, but I didn’t feel like eating avocado in the morning. I just can’t give up Turkish style breakfast with various cheeses, olives, tomatoes and cucumbers. 

I already feel the flavor of egg when eating plain avocado, this might be the reason why these two make great couples.

Egg is one of the foods I can’t live without, I love it so much that I can have an egg at each meal, but I stop myself due to health concerns. This one was my second egg in a day, so I don’t think it was a problem.

I love my egg soft boiled and Yusuf loves his a bit hard boiled, so we had two versions of Egg and Avocado Toast in the end. I can die for the moment when the yolk oozes just when I bite or cut the egg! So mouthwatering, isn’t it?

We need a ripe avocado for this egg and avocado toast, because we want it to stick on the toasted bread. It’s easier to handle the toast this way. Well, it’s still a bit hard not to have a mess when eating the soft boiled egg on the top, but I do love that mess!

If you love hard boiled eggs or if you want to be a clean eater, then use a hard boiled egg on your toast just like Yusuf did. It’s so tasty either way!

Egg and avocado are the perfect couple on toasted bread slices.

Ingredients

Scale
  • 1 ripe avocado
  • Salt to taste
  • Half lemon to squeeze on avocado
  • 2 large eggs, soft boiled or hard boiled
  • 2 slices of bread, toasted

Instructions

  1. Scoop out the avocado and spread on toasted bread slices evenly.
  2. Sprinkle salt and squeeze lemon on them.
  3. Top with the eggs, sprinkle a little salt on them and serve.
