Fruit Parfait With Yogurt

An easy-to-make breakfast parfait with yogurt, fruit (berries) and granola. Your morning treat is ready in 5 minutes. You can even make it a day before and store it in the refrigerator till next morning.

Ingredients

  • 2 cups Greek yogurt (or regular plain yogurt)
  • 1 tablespoon honey (plus more for a drizzle on the top)
  • 1 cup strawberries, diced
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 1/2 cup granola
  • Fresh mint leaves, for garnish

Instructions

  1. In a medium sized bowl, whisk together Greek yogurt and honey.
  2. Put 2-3 tablespoons of yogurt into the bottom of a glass cup. Top with diced strawberries, blueberries and raspberries. Sprinkle granola on these. Then repeat the same layers. 
  3. Finally, drizzle a little honey on top of each parfait cup, garnish with mint leaves and serve.

Notes

  1. Use glass cups. Although you can make this yogurt parfait in bowls, glass cups or jars make it look even more fancy.
  2. Pat the berries dry before adding them into the cups. 
  3. Make sure that the berries and granola touch the glass when making the layers. The parfait will look more appealing this way.
  4. Make sure to dice the strawberries. They are larger than the other berries, so it is better to chop them first.
  5. Make Ahead: To make things easier, you can prepare the berries the day before, whisk together the yogurt and honey and keep them in separate containers in the refrigerator. So the only thing you need to do is to assemble the sweetened yogurt, berries and granola. Your on-the-go breakfast is ready in no time.
  6. Store: If you don't mind soggy granola (which is really not a bad thing), you can combine yogurt with granola and fruit in layers in jars or glass cups the day before. Cover the cups well with a plastic wrap and store in the refrigerator. 
  7. If you want the granola in your breakfast parfait keep crunchy, don't add it until the serving time. Just prepare the layers of Greek yogurt and fruit in jars and store them in the refrigerator. When you are ready to eat the next morning, just sprinkle some granola on it and enjoy.
  8. Freezing: Not recommended.
