These bites are slightly crispy outside and soft in the center. They are flavored with cinnamon sugar and surprise you with their incredible yumminess and texture. These are not roasted in oven unlike many recipes around the web. I simply fry them on the stove and you know what? It is much quicker than roasting in oven.
I’ve never seen butternut squash in my city here, mom brought it from my hometown. No this is not mom’s recipe this time. She usually cooks it in savory form with green lentils just like Pumpkin Stew with Lentils and Chickpeas. But I wanted to make something sweet that we can snack on. Wouldn’t it be great to snack on these using a toothpick on a movie or game day? Popcorn isn’t the only choice, right? If you are a sweet snack person, I’m pretty sure you will love these easy peasy Cinnamon Sugar Butternut Squash Bites!
If you don’t have butternut squash in your area, just use pumpkin instead. You might need to reduce the amount of sugar though if your pumpkin is sweet enough. Carefully peel and dice it trying to make the pieces in almost the same size. I preferred cubes as I wanted to serve them with some fancy toothpicks. Just cut it in the shape you want.
Heat little sunflower oil in a large skillet and toss in the cubed butternut squash. Let them fry until slightly tender over medium low heat for about 10 minutes shaking the skillet occasionally. Mix sugar and cinnamon in a small bowl and sprinkle over the butternut squash bites. Keep frying for about 5 minutes.
Add in grape molasses to give them a nice color and to speed up the caramelization process. Cook for about 10 minutes and take from the skillet.
Serve Cinnamon Sugar Butternut Squash Bites warm or cold with pomegranate seeds or nuts of your choice.

Cinnamon Sugar Butternut Squash Bites
A little crispy on the outside and soft in the center. These cinnamon sugar flavored butternut squash bites are perfect for movie days, game nights or any party!
- Prep Time: 10 minutes
- Cook Time: 35 minutes
- Total Time: 45 minutes
- Yield: 6 1x
- 1 and 1/2 tablespoons sunflower oil
- 3 cups butternut squash, peeled and cubed
- 1/4 cup sugar
- 1 teaspoon cinnamon
- 3 tablespoons grape molasses
- 2 tablespoons pomegranate seeds
- Heat oil in a large skillet. Fry butternut squash cubes over medium low heat until slightly tender, for about 10 minutes.
- Mix sugar and cinnamon in a bowl and sprinkle over the skillet. Continue frying them for about 15 minutes shaking occasionally so that they are blended with cinnamon sugar well.
- Drizzle over grape molasses and cook for another 10 minutes over the lowest heat.
- Serve warm or cold with pomegranate seeds or nuts.
