A healthy yet filling salad with chickpeas, tuna, tomatoes and cucumbers.

Ingredients

Salad:

  • 15 ounces tuna, canned
  • 15 ounces chickpeas, rinsed and drained
  • ½ cup cucumber, chopped
  • ½ cup tomatoes, chopped
  • ¼ cup peas, canned
  • 1 red onion, chopped
  • ¼ cup fresh dill, chopped

Shallot Vinaigrette:

  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 1 shallot, finely chopped
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Combine everything for the vinaigrette in a jar and shake well.
  2. Mix together the salad ingredients in a large bowl. Toss with the vinaigrette.
  3. Season with extra salt if needed and serve.
