Buttermilk chocolate muffins. Moist, tender and chocolatey.

Ingredients

  • 2 eggs
  • ¾ cup sugar
  • 1 cup buttermilk
  • 1/3 cup olive oil
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • ½ cup cocoa powder
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup dark chocolate chips
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350 F. Prepare a muffin pan with liners. Set aside.
  2. Beat eggs and sugar until creamy. Add in buttermilk, olive oil and vanilla extract.
  3. In a medium bowl, combine together flour, cocoa powder, baking powder and salt. Sift the dry ingredients into wet and mix just until everything is combined.
  4. Fold in chocolate chips.
  5. Fill the muffin liners about 2/3 full. Bake them for 18 minutes or until a toothpick inserted into the center comes out clean.
  6. Remove and cool them on a cooling rack.
  7. Sift powdered sugar on each before serving.
