I know there is a hidden love of zucchini inside you, you just need the right recipes.
These zucchini sticks are crunchy on the outside and very well cooked on the inside. These are light, tasty and absolutely addicting! As we love to dip fries into some sauce, I prepared a yogurt sauce with garlic and fresh mint. No need to say they disappeared in no time! If you prefer marinara sauce, go with it. I’m sure the zucchini sticks pair with any sauce perfectly.
I used cornmeal for these amazing zucchini sticks, so they are also gluten-free. You can absolutely use regular flour or breadcrumbs if you don’t have any problems with gluten. I used a little parmesan to coat these and they gave a nice texture, but I think I should have used more.
Even the zucchini haters should give it a try since these are very similar to baked french fries and I know they will love these! These zucchini sticks can be served as a side dish or as an appetizer. The best thing about them is that they are healthy because they are not fried but baked, so they don’t contain oil at all. I’m telling you, these are guiltlessly delicious!

Baked Zucchini Sticks
Tasty, light and addictive zucchini sticks fried in oven. These are gluten-free too!

- ½ cup cornmeal
- ¼ cup grated parmesan
- 1 pound zucchini, sliced into sticks
- salt and pepper to taste
- 1 egg, lightly beaten
- For the sauce:
- ½ cup greek yogurt
- 4 tablespoons water
- A pinch of salt
- 3 cloves garlic, mashed
- 3 tablespoons minced fresh mint
- Preheat the oven to 425F.
- Season the zucchini slices with salt.
- Mix cornmeal with parmesan.
- Dip them in the beaten egg and coat with cornmeal and parmesan.
- Place them on a baking sheet. Make sure they don’t overlap.
- Bake until golden, about 25 minutes.
- Meanwhile, mix all ingredients for the sauce.
- Serve the zucchini sticks warm with yogurt sauce.
