Fig salad with arugula, walnuts and goat cheese is a perfect salad that combines sweet, savory and tangy flavors.

Ingredients

Salad Dressing:

  • 1 and 1/2 tablespoons balsamic vinegar
  • 3 tablespoons olive oil
  • 1 teaspoon honey (or maple syrup)
  • ½ teaspoon salt
  • ½ teaspoon pepper

Salad:

  • ½ cup walnuts (or pecans), halved or roughly chopped
  • 6 cups baby arugula
  • 1 small red onion, sliced
  • 6 figs, stems cut off and quarted
  • 2 ounces (56g) goat cheese

Instructions

Dressing:

  1. In a small jar or bowl, whisk together all the ingredients. Taste and adjust vinegar or salt to your taste.

Salad:

  1. Toast walnuts in a skillet over medium high heat, shaking the skillet occasionally for 5 minutes. Don’t add oil. Transfer onto a plate to let them cool completely.
  2. In a large bowl, combine walnuts, arugula, red onion and figs.
  3. Drizzle the dressing over them and toss well.
  4. Sprinkle goat cheese on the top of the salad and serve.
  5. Add even more figs on the top when serving if you want.
